Ingredients (17)
- 1 tbsp extra virgin olive oil
- 2 garlic cloves, crushed
- 1 white onion, trimmed, finely chopped
- 350g beef mince
- 1/2 cup tomato sauce
- 1/2 cup barbecue sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp American mustard
- 4 gherkins
- 125g cream cheese, softened
- 2 tbsp thousand island dressing
- 1 large white sesame seed cob loaf
- 4 tasty cheese slices
- 1 large tomato, seeded, diced
- Cooked French fries, to serve
- Gem lettuce leaves, to serve
- Quartered baby cucumbers, to serve
Method
- Step 1 Heat oil in a large frying pan over medium-high heat. Add garlic and 3/4 of the onion. Cook for 2 minutes or until softened. Add mince. Cook, breaking up lumps with a wooden spoon, for 6 to 8 minutes or until browned. Add tomato, barbecue and Worchesterhire sauces and mustard. Finely chop 2 gherkins. Add to mince mixture. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 15 minutes or until thickened.
- Step 2 Meanwhile, place cream cheese in a bowl. Stir until smooth. Add thousand island dressing. Stir until combined.
- Step 3 Preheat oven to 180C/160C fan-forced. Line a baking tray with baking paper. Cut 4cm off the top of cob loaf. Leaving a thick crust, remove soft bread from centre. Cut soft bread and bread top into large cubes. Place cob and bread cubes on prepared tray.
- Step 4 Spoon 1/3 of the mince mixture into cob, spreading to level. Top with 1 1/2 slices of cheese. Spread with 1/3 of the cream cheese mixture. Repeat to form two more layers, using 1/2 the mince mixture and1/2 cream cheese mixture for each layer. Finish with remaining slice of cheese. Bake for 20 to 25 minutes or until hot and bubbling. Stand for 5 minutes.
- Step 5 Meanwhile, thinly slice remaining gherkins. Combine with tomato and remaining onion in a bowl. Season.
- Step 6 Spoon tomato mixture over cob. Serve with toasted bread cubes, French fries, lettuce and cucumber.
