Ingredients (5)
- 2 carambola (star fruit), sliced
- 3 nashi pears, cored, cut into wedges
- 6 passionfruit, pulp removed
- 3 pomegranates, juiced (see Notes)
- 2 tbsp caster sugar
Method
- Step 1 Place the carambola, nashi pears and passionfruit pulp in a large bowl. Toss to combine.
- Step 2 Place the pomegranate juice and caster sugar in a small saucepan. Stir over medium heat for 3 minutes or until the sugar dissolves. Bring to the boil, reduce heat and simmer, uncovered, for 3 minutes. (See microwave tip.) Remove from the heat and allow to stand for 5 minutes.
- Step 3 Pour the syrup over the fruit and toss gently to combine.
- Step 4 Serve immediately
