Ingredients (10)

  • 2 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp black peppercorns
  • 1 tsp ground cinnamon
  • 10 long green chillies, stalks removed
  • 10 garlic cloves
  • 1 bunch coriander leaves, roots included
  • 1/4 cup mint leaves
  • 1 tsp salt
  • 1/3 cup olive oil

Method

  • Step 1 Toast the cumin, coriander seeds and peppercorns in a medium frying pan over medium-low heat for 3-4 mins. Process in a food processor until finely ground.
  • Step 2 Add the cinnamon, chillies, garlic, fresh coriander, mint and salt. Process for 5 secs to coarsely chop. With the motor running, add oil in a thin stream and process until smooth.
