Ingredients (10)
- 2 tbsp cumin seeds
- 1 tbsp coriander seeds
- 1 tbsp black peppercorns
- 1 tsp ground cinnamon
- 10 long green chillies, stalks removed
- 10 garlic cloves
- 1 bunch coriander leaves, roots included
- 1/4 cup mint leaves
- 1 tsp salt
- 1/3 cup olive oil
Method
- Step 1 Toast the cumin, coriander seeds and peppercorns in a medium frying pan over medium-low heat for 3-4 mins. Process in a food processor until finely ground.
- Step 2 Add the cinnamon, chillies, garlic, fresh coriander, mint and salt. Process for 5 secs to coarsely chop. With the motor running, add oil in a thin stream and process until smooth.
