Ingredients (7)

  • 3 Lebanese cucumbers
  • 4 green onions, thinly sliced
  • 1/4 cup roughly chopped fresh dill
  • 1/4 cup light olive oil
  • 1 tbsp white wine vinegar
  • 1/2 tsp fennel seeds, toasted (see note)
  • 1 garlic clove, crushed

Method

  • Step 1 Using a vegetable peeler, cut cucumbers into ribbons. Place cucumber, onion and dill in a bowl.
  • Step 2 Whisk oil, vinegar, fennel seeds and garlic together in a bowl. Season with salt and pepper. Pour over cucumber mixture. Toss to combine. Serve.
