Ingredients (7)
- 3 Lebanese cucumbers
- 4 green onions, thinly sliced
- 1/4 cup roughly chopped fresh dill
- 1/4 cup light olive oil
- 1 tbsp white wine vinegar
- 1/2 tsp fennel seeds, toasted (see note)
- 1 garlic clove, crushed
Method
- Step 1 Using a vegetable peeler, cut cucumbers into ribbons. Place cucumber, onion and dill in a bowl.
- Step 2 Whisk oil, vinegar, fennel seeds and garlic together in a bowl. Season with salt and pepper. Pour over cucumber mixture. Toss to combine. Serve.
