Turkey bolognaise with silverbeet

Ingredients (10)

  • 375g spaghetti
  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 1 celery stick, finely chopped
  • 1 carrot, finely chopped
  • 500g Coles Australian Turkey Mince
  • 420g jar cherry tomato and basil tomato pasta sauce
  • 4 silverbeet leaves, trimmed, chopped
  • Grated parmesan, to serve
  • Flat-leaf parsley, chopped, to serve

Method

  • Step 1 Cook the pasta in a large pan of salted boiling water following packet directions or until al dente. Drain.
  • Step 2 Meanwhile, heat the oil in a large deep frying pan over medium-high heat. Add the onion, celery and carrot and cook, stirring, for 5 mins or until just softened. Add the mince and cook, stirring with a wooden spoon to break up any lumps, for 7 mins or until browned. Add the pasta sauce and bring to a simmer. Stir in the silverbeet and cook for 5 mins or until just wilted.
  • Step 3 Add the pasta to the turkey mixture and stir until heated through. Serve the pasta topped with parmesan and parsley.
